What is Carrageenan?
Carrageenan is a multi-functional ingredient used across many sectors; including food, pet food and even technical/industrial. It comes in three main types: Lamba, Kappa and Iota.
Each have different characteristics and are determined by which species of seaweed that the carrageenan has been derived from, including both cold and warm water species.
They all can add different benefits to recipes in their own way, including gelling, increasing viscosity and stabilising, and can have a whole host of properties when blended together or with other hydrocolloids.
Carrageenan is suitable for a range of applications including flans, mousses, canned foods (in combination with locust bean gum), cheeses, and flavoured milks.
