Characteristics of Chicken Gelatine

  • Appearance: Chicken gelatine is typically translucent and may appear white or slightly yellowish in color, depending on the source and purification process.
  • Texture: Like other gelatines, it forms a gel when dissolved in hot water and cooled, making it ideal for thickening and stabilising.
  • Taste and Odour: Chicken gelatine is neutral in taste and odour once purified, making it suitable for use in a wide variety of products without affecting flavour.

Uses of Chicken Gelatine:
